Low Fodmap Tomato Carrot Soup
Ingredients
  • 2 tablespoons (30 ml) olive oil
  • 2 teaspoons (3 g)ginger
  • 1 pound (450 g) carrots, peeled and chopped into 1 inch slices
  • 1.5 pounds (680 g)tomatoes
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 2 cups (500 ml) low FODMAP vegetable stock*
  • 1 bay leaf
  • 2 tablespoons (15 g) nutritional yeast or grated parmesan (optional - for extra cheesiness/ use nutritional yeast for dairy free)
