Ingredients
- subheading: First I cut the rack into sections of 3 ribs each. Then I prepare my ‘cooking liquid’ in the Instapot. My go to combination is (approximate amounts cuz I dump):
- 2 cups chicken stock,
- ½ a beer,
- ½ cup apple cider vinegar,
- ⅓ cup brown sugar,
- 4 bay leaves,
- one yellow onion,
- 6 cloves garlic,
- ½ tsp black pepper.
- I then dry rub the ribs generously with McCormick Grill Mates “Chipotle Roasted Garlic”
Steps
- Place the rib sections gently into the liquid, dont agitate - otherwise the rub rinses off.
- Pressure cook on manual for 30 minutes.
- Naturally release - do not quick release.
- Ribs will be fall off the bone tender....so carefully remove and throw them on the gril for a few minutes to char and smother them with Sweet Baby Rays BBQ sauce.
- (You can always brush with BBQ and throw them under the broiler, too.)

- BONUS PRO TIP: simmer fresh corn on the cob in your remaining rib cooking juice for some good eatin’!!
