Creamy Blue Cheese Chicken
Ingredients
  • 1 pound chicken breasts, cubed
  • salt & pepper, to taste
  • 8 oz mushrooms, sliced
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 tbsp blue cheese crumbles
Steps
  1. Heat the oil in a skillet over medium high heat on the stove.
  2. Add the chicken to the skillet and season. Cook until completely done and seared on all sides. Remove and set aside.
  3. To the same skillet, add the butter and sliced mushrooms. Sauté over medium heat until the mushrooms become tender.
  4. Add the minced garlic and sauté another 30 seconds.
  5. Stir in the broth, heavy whipping cream and half of the blue cheese, plus any desired herbs or seasonings.
  6. Simmer until the sauce has thickened.
  7. Place the chicken back into the skillet and toss to coat in the sauce.
  8. Add the remaining blue cheese crumbles on top and serve.
