Artichokes with Fresh Lemons
Ingredients
  • 8 Artichoke hearts (1 to 2 per person)
  • 10 small potatoes peeled and cut into large wedges (allow 2 wedges per artichoke)
  • 6 Carrots peeled and cut into 1 inch lengths (allow 2 pieces per artichoke)
  • 4 Spring Onions chopped finely
  • Fresh dill, chopped - use about ½ cup
  • Juice of 1 lemon
  • 1 cup of olive oil
  • Flour, ⅓ cup for 6 people
  • Salt and pepper
