Delicious Lemon Cake

Ingredients
- 1 and ¼ cups (156g) + All Purpose Flour
- ¾ cups (150g) White Sugar
- ¾ tsp Baking Soda
- ⅓ tsp Salt
- ¾ cups (180ml) non-dairy milk
- ¼ cup (60ml) Extra Virgin Olive Oil
- ½ Tbsp Vinegar (or Lemon Juice)
- ½ tsp Vanilla Extract (optional)
- 1 and ½ tsp Lemon Extract (optional)
- 2 Tbsp Lemon Zest + 1 for decoration
- A pack of lemon glaze
Steps
- Preheat the oven to 350°F (180°C).
- Spray two a pound cake pan with non-stick spray or just oil and line the bottom with parchment paper. Set aside.
- Sift the flour into a mixing bowl and add the sugar, baking soda and salt. Then add the milk, olive oil, vinegar, vanilla, lemon extract and lemon zest. Whisk with a hand whisk briefly until nicely combined and no big lumps remain. Don’t overmix, tiny lumps are okay.
- Put the batter into the cake pan and place into the oven to bake for 30 minutes or until a toothpick inserted into the center of one of the cakes comes out clean (I needed around 35 to 40 mins).
- Remove the cake from the pan and place onto a wire cooling rack to cool completely before glazing.
- Heat up the glaze to make it liquid, pour it on top of the cake and spread it on the surface of the cake with a spatula or a spoon. Sprinkle the top with lemon zest.
- Voila! This cake is moist, flavorful and soft with a crunch and extra flavor of the glaze. Perfect with a cup of tea, my friends loved it
