Delicious Lemon Cake
Ingredients
  • 1 and ¼ cups (156g) + All Purpose Flour
  • ¾ cups (150g) White Sugar
  • ¾ tsp Baking Soda
  • ⅓ tsp Salt
  • ¾ cups (180ml) non-dairy milk
  • ¼ cup (60ml) Extra Virgin Olive Oil
  • ½ Tbsp Vinegar (or Lemon Juice)
  • ½ tsp Vanilla Extract (optional)
  • 1 and ½ tsp Lemon Extract (optional)
  • 2 Tbsp Lemon Zest + 1 for decoration
  • A pack of lemon glaze
Steps
  1. Preheat the oven to 350°F (180°C).
  2. Spray two a pound cake pan with non-stick spray or just oil and line the bottom with parchment paper. Set aside.
  3. Sift the flour into a mixing bowl and add the sugar, baking soda and salt. Then add the milk, olive oil, vinegar, vanilla, lemon extract and lemon zest. Whisk with a hand whisk briefly until nicely combined and no big lumps remain. Don’t overmix, tiny lumps are okay.
  4. Put the batter into the cake pan and place into the oven to bake for 30 minutes or until a toothpick inserted into the center of one of the cakes comes out clean (I needed around 35 to 40 mins).
  5. Remove the cake from the pan and place onto a wire cooling rack to cool completely before glazing.
  6. Heat up the glaze to make it liquid, pour it on top of the cake and spread it on the surface of the cake with a spatula or a spoon. Sprinkle the top with lemon zest.
  7. Voila! This cake is moist, flavorful and soft with a crunch and extra flavor of the glaze. Perfect with a cup of tea, my friends loved it
