Ingredients
  • Pistachio (or any nut) Brittle
  • You can use untoasted, unroasted pistachios here. You can easily sub peanuts or almonds. Roasted pistachios, shelled, salty, can also be tasty if your taste runs more towards salty right up against sweet.
  •  
  • 1-½ cups unsalted pistachios, toasted, cooled
  • 1-⅓ cups sugar
  • ½ cup water
  • ¼ cup light corn syrup
  • 2 tablespoons unsalted butter
  • ½ teaspoon almond extract
  • ¼ teaspoon baking soda
  • 2 teaspoons kosher salt
