Ingredients
  • ½ Butternut pumpkin
  • Small onion and 2 cloves garlic chopped
  • 1 leek
  • 1 cup red lentils
  • 1 tspn Italian seasoning
  • ½ to 1 tspn red pepper flakes
  • Pinch of chilli
  • 1 stock cube
  • 1 litre stock
Steps
  1. Fry up leek, onions and garlic in some water until soft (or oil if you prefer)
  2. Add seasonings
  3. Add chopped pumpkin
  4. Add lentils
  5. Add stock
  6. Bring to boil then simmer until pumpkin is soft.
  7. Add extra water if necessary
  8. Once cooler, Use stick blender to smooth.
  9. Taste before adding any additional salt and pepper.
  10. Add chopped parsley to serve.
