Crispy Oven-Fried Cauliflower Salad
Ingredients
  • Crispy Oven ­fried Cauliflower
  • Romaine lettuce, chopped
  • Napa cabbage, thinly sliced
  • Grated carrots
  • Frozen shelled edamame, thawed
  • Mandarin oranges, peeled and separated into segments (can sub tangerines or regular oranges)
  • Green onions, sliced
  • Toasted Sesame Dressing
  • Toasted Sesame Seeds
  • subheading: Crunchy Noodles & Almonds (directions below):
  • 1 oz whole grain angel hair or thin spaghetti noodles, snapped into ¾" long pieces (30g)
  • ¼ cup chopped almonds (30g)
Steps
  1. Heat a skillet over medium heat for 2 minutes. Add the noodle pieces and toast for 3 minutes,
  2. shaking the pan often so they don't burn. Add the almonds and continue to toast while
  3. shaking the pan for an additional 2 minutes, until the noodles and almonds are golden brown.
  4. (The noodles will look like little toothpicks when done!)
  5. Set aside to cool while you build your salad.
  6. subheading: To assemble your Salad:
  7. Place a generous handful of Romaine lettuce and Napa cabbage in your serving dish, followed
  8. by some carrots, edamame, mandarin oranges and green onions. Drizzle with Toasted Sesame
  9. Dressing and then add some Cauliflower on top of everything. Sprinkle some Sesame Seeds
  10. and Crunchy Noodles & Almonds over the whole thing and add a bit more Dressing.
