Ingredients
  • Instant Pot ribs and smashed potatoes! I put baby back ribs on the trivet, curled up standing on their side. I put gold potatoes inside that, whole, and I dumped most of a bottle of beer in the bottom. The ribs were rubbed with a bunch of spices, and I dumped a bunch of minced garlic on top of the potatoes. 30 minutes high pressure, QR. Then I cut the ribs up and put them in the center of a sheet pan and brushed them with homemade barbecue sauce, and surrounded them with the potatoes. I smashed each potato with a small pyrex bowl and salted them. I stuck the whole pan under the broiler on high for 3 minutes, then took it out, topped the potatoes with cheddar cheese, and put it back in for 2 more minutes. The ribs were tender and juicy, with just a bit of char, and the potatoes were cheesy and perfectly cooked!
