Ingredients
  • Instant Pot Recipes and S ites NPR = natural pressure release - leave the knob alone for the specified period before venting QR = quick release - turn knob to venting Carnitas: Ingredients: 4 to 6 pounds fatty pork shoulder or butt - cut into 2 inch cubes 1.5 cups cold water ¼ cup oil (canola or veg etable ; not olive) 1 medium onion - diced or sliced thin ½ orange - cut into 2 pieces 8 garlic cloves (jarred minced garlic is fine) 3 bay leaves 2 teaspoons dried oregano 1.5 teaspoons sugar 2 teaspo ons salt Directions: Pour water into IP. Mix all the other ingredients into the water except the pork. Add the pork and slosh it around a bit. (The water won't cover all the pork.) Cook on m anual 50 minutes; NPR 25 minutes. During the NPR, preheat the oven to 475 degrees. With a slotted spoon, put the meat on a cookie sheet. (Line with foil if desired.) Shred the meat with a fork. Put the meat in the preheated oven until the meat browns on one side and the fat crisps a bit - this only takes ab out 5 to 10 minutes, so keep watch. Strain the liquid from the pot into a bowl to drizzle over the meat. Serve over rice, in burritos, etc.
