Oven-Roasted Chorizo Meatballs with Tomato Ragu
Ingredients
  • 500g raw chorizo sausages, casings removed
  • 250g pork mince
  • ¾ cup (75g) fine sourdough breadcrumbs
  • 1 egg, lightly beaten
  • 2 cups mixed herbs, leaves chopped (we used thyme, oregano and parsley)
  • ¼ cup (60ml) Worcestershire sauce
  • 2 cups coarsely grated cheese (we used cheddar and mozzarella)
  • subheading: TOMATO RAGU:
  • 1kg overripe tomatoes, roughly chopped
  • 3 garlic cloves, crushed
  • 2 tsp caster sugar
  • 2 tbs tomato paste
  • ¼ cup (60ml) extra virgin olive oil
  • subheading: HERBY GARLIC BREAD:
  • 1 cup mixed herbs, leaves picked (we used flat-leaf parsley and basil)
  • 6 garlic cloves
  • 200g unsalted butter, softened
  • 1 sourdough baguette, halved lengthways
