Mediterranean Chicken with Olives and Prunes
Ingredients
  • 4 pounds chicken thighs skin on and bone in
  • ½ cup extra-virgin olive oil
  • ½` cup red wine vinegar balsamic vinegar can be substituted
  • 12 cloves garlic, minced
  • ½ cup capers, drained
  • 24 pieces prunes, cut in half
  • 24 pieces large green pitted olives, cut in half
  • 1 tablespoon dried oregano
  • 6 dried bay leaves
  • 1 teaspoon Kosher salt
  • 1 teaspoon coarse ground black pepper
  • ¼ cup brown sugar
  • ¼ cup dry white wine
