Ingredients
  • 3 pounds sweet potatoes, peeled and cut into 2-inch chunks
  • ¾ cup full-fat coconut milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground cardamom (optional but really nice)
  • ½ teaspoon salt
  • 1 ¼ cups chopped pecans, divided
  • 3 cups vegan mini marshmallows
