  • 1 cup greek yogurt
  • ½ cup olive oil, plus more as needed
  • kosher salt
  • freshly cracked black pepper
  • 1 ½ lbs boneless, skinless chicken breasts
  • 4 ears of corn
  • 2 oz (or 2 large handfuls) fresh arugula
  • 1 pt cherry tomatoes, halved
  • ½ cup halved castelvetrano olives
  • ½ cup finely diced red onion
  • 4 oz feta cheese, crumbled
  • ¼ cup roasted, salted pistachios, roughly chopped
