Roasted Miso Garlic Cauliflower

  • 2 Tbsp miso (I use Hikari Miso‘s Organic White Miso (you can buy on Amazon); if you use another type of miso, adjust the amount of maple syrup based on the saltiness of your miso)
  • 1 Tbsp maple syrup
  • 1 tsp soy sauce
  • 1 clove garlic
  • subheading: For the Cauliflower:
  • 1 head cauliflower (medium to large; 2.3 lb, 1 kg)
  • 4 Tbsp neutral oil
  • ¼ to ½ tsp Diamond Crystal kosher salt
