Turkey Meatballs in Yellow Curry with Zucchini and Bell Pepper
Ingredients

  • 2 green onions chopped fine
  • 2 tablespoons cilantro chopped fine
  • 2 garlic cloves minced

  • 1 teaspoon gelatin
  • ½ teaspoon salt
  • 1 teaspoon avocado oil

  • ½ yellow onion sliced
  • 1 bell pepper sliced
  • 2 zucchini cut into ½-inch thick slices
  • 1 tablespoon yellow curry paste such as Mae Ploy
  • 1 garlic clove minced
  • ½ tablespoon ginger grated
  • 14 ounces light coconut milk
  • 1 teaspoon gelatin optional but acts as a thickener and adds body to the sauce
  • 1 tablespoons monk fruit powdered, or 4 tablespoons coconut aminos
  • 1 teaspoon fish sauce or more to taste
  • ½ teaspoon salt to taste
  • 1 tablespoon lime juice
  • handful fresh basil
