Perfect side salad that is also easy to put together.

Ingredients
  • 2 large English Cucumbers
  • 3 large Roma Tomatoes, diced large, or 1 c. Cherry Tomatoes, halved
  • ½ c. Red Onion, sliced thin
  • ½ c. Kalamata Olives
  • ½ c. Goat Cheese Feta,* crumbled
  • subheading: Dressing:
  • 3 T. Extra Virgin Olive Oil
  • 2 T. Red Wine Vinegar
  • 1 t. Dijon Mustard
  • 2 t. Garlic, minced
  • 1 t. dried Oregano
  • ¼ t. Sea Salt
  • ¼ t. Pepper
Steps
  1. Peel the cucumbers and quarter them lengthwise and then slice crosswise into ½" slices.
  2. In a medium bowl, add the cut cucumbers, cut tomatoes, red onion, olives and Feta cheese. Gently toss to combine.
  3. In a small bowl, combine dressing ingredients and whisk to combine. Pour over salad ingredients and using a rubber spatula, gently mix until dressing coats all of the salad. Serve.
Notes
  • *Cow Milk Feta may be used, for those who do not have a dairy allergy.
