Tomato Feta Salad

Ingredients
  • 4 pints grape tomatoes
  • 1 ½ Cups diced red onion
  • ¼ Cup white wine vinegar
  • 6 Tbsp Olive Oil
  • 1 Tbsp Kosher Salt
  • 1 tsp ground black pepper
  • ¼ Cup chopped fresh basil leaves (or dried)
  • ¼ Cup chopped fresh parsley leaves (or dried)
  • 1 ½ lbs. Feta Cheese
Steps
  1. Cut tomatoes in half and place in large bowl
  2. Add onion, vinegar, oil, salt, pepper, basil and parsley and toss well
  3. Dice feta - gently fold it into the salad and serve at room temperature
