131 Main Cornbread
This is a variation of 131 Main’s sweet cornbread. Depending on preferences, you can add or omit the green chilies.

Ingredients
  • 1 egg
  • ⅓ cup milk
  • 1 8.5 oz. package of corn muffin mix
  • ¼ cup sour cream
  • ⅓ cup green chilies (optional)
  • ⅓ cup can creamed corn
  • ½ cup brown sugar
  • 3 Tbs. butter
  • 3 Tbs. honey
  • 1 medium chopped onion
Steps
  1. Preheat oven to 375.
  2. In small saute pan combine 1 T. butter and chopped onion, add salt and pepper to taste and cook on medium until transparent. (about 5 to 10 minutes) set aside.
  3. In medium mixing bowl add muffin mix, sour cream, chilies and creamed corn. Mix in cooked onions and stir it all together. Pour into greased bread pan. Chop remaining butter in small pieces and place all over the top of mixture along with ½ the brown sugar.
  4. Bake at 375 until cooked through, approximately 20 to 25 minutes. When bread is done baking drizzle top with honey and remaining brown sugar. Let cool and serve.
