I made this in Instant pot pressure cooker... High pressure for 10 min.. Natural pressure release for 15... I browned chicken and then browned Veggies first... I used the steps in the Pressure cooker Chicken Soup I have in my recipes on copymethat.com ...
Ingredients
  • 2 small (12 ounces or about ¾ths a pound) boneless skinless chicken breasts
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup diced carrots
  • 1 and ½ teaspoon minced garlic
  • ¾ cup uncooked quinoa, I used a roasted garlic flavored quinoa
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 6 cups chicken broth*
  • ¼ teaspoon red pepper flakes
  • ½ to 1 full teaspoon Italian seasoning
  • 2 teaspoons dried oregano
  • ½ to 1 full tablespoon dried basil
  • Salt and pepper, to taste preference
  • Parmesan Cheese
  • Optional: fresh rosemary, fresh parsley
