Instant Pot Spinach Artichoke Dip

  • 1 (14 oz can) Artichoke Hearts, drained, reserve brine
  • 1 (10 oz pkg) Frozen Spinach, about 2 ½ cups loose frozen spinach
  • 8 ounces Cream Cheese
  • ¼ cup Mayonnaise
  • ¼ cup Sour Cream
  • 4 cloves Garlic, minced
  • ¼ teaspoon Sea Salt
  • ⅛ teaspoon Black Pepper
  • 1 cup Monterey Jack Cheese, 4 oz shredded
  • ½ cup Parmesan Cheese, shaved, shredded, or fresh grated
