Bacon Spinach Blintzes
  • Cauliflower Egg Thins
  • 1 cup fresh spinach
  • ½ cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, shredded
  • 2 slices bacon, chopped
  • 6 oz Ricotta cheese
  • 2 tbsp dried minced onions
  • 2 tsp minced garlic
  • 1 tsp oregano
  • ¼ tsp salt
  • ¼ tsp pepper
  1. In a skillet over med-high heat cook bacon to desired crispness.
  2. Save the grease for cooking in the following steps.
  3. Add spinach, and seasonings
  4. Stir and cook until the Spinach is fully wilted, then add in the cheeses
  5. Combine all ingredients in the frying pan until evenly mixed, and remove from heat.
  6. Warm up your egg thins according to the packaging, and fill with mixture.
  7. Roll them up, and sprinkle with more cheese and bacon if desired
