Collard Vegetable Wraps with Creamy Basil Hemp Sauce
Ingredients
  • ¼ cup/40g shelled hemp seeds
  • ¼ cup/60ml filtered water
  • 2 Tablespoons/30g extra virgin olive oil
  • The juice of ½ a lemon
  • 1 small bunch basil leaves (about 1 cup)
  • 1 small garlic clove
  • ½ teaspoon coarse sea salt (use less if your salt is fine not coarse)
  • ¼ teaspoon freshly ground black pepper
  • 4 large chard or collard leaves, stems removed
  • ½ seedless cucumber, seeds removed and cut into matchstick sized pieces
  • 1 to 2 medium zucchini, seeds removed cut in half and cut into matchstick sized pieces
  • 1 red, orange or yellow bell pepper, seeds removed and cut into matchstick sized pieces
  • ½ an avocado, sliced thinly (optional but adds a nice extra layer of creaminess)
