Vegan French Onion Soup
Ingredients

  • 2 pounds yellow onions, thinly sliced

  • 1 cup dry red wine

  • 2 bay leaves
  • 1 tablespoon all-purpose flour
  • 6 cups low sodium vegetable broth
  • 2 tablespoon low sodium soy sauce
  • Salt and pepper to taste
  • subheading: For the Cashew Cheese:
  • 1 ¼ cup water
  • ½ cup raw cashews, soaked in water 4 to 8 hours and drained
  • 1 ½ tablespoons tapioca starch
  • 1 tablespoon white miso paste
  • 1 ½ teaspoons lemon juice
  • ¼ teaspoon salt
  • subheading: For Serving:
  • 4 to 8 slices French bread or baguette
