Chocolate Chip Cookie Layer Cake
Ingredients
  • 3 cups ( 375g) all-purpose flour ( spooned & leveled)
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup ( 16 Tbsp; 226g) unsalted butter, softened to room temperature
  • 1 cup ( 200g) packed light or dark brown sugar
  • ½ cup ( 100g) granulated sugar
  • 2 large eggs, at room temperature
  • 2 and ½ teaspoons pure vanilla extract
  • 2 cups ( 360g) semi-sweet chocolate chips (I used mini), plus extra for garnish
  • Chocolate Peanut Butter Frosting
  • 1 cup ( 16 Tbsp; 226g) unsalted butter, softened to room temperature
  • ½ cup ( 130g) creamy peanut butter*
  • 3 and ½ cups ( 420g) confectioners’ sugar
  • ½ cup ( 41g) unsweetened natural or dutch-process cocoa powder
  • 1 teaspoon pure vanilla extract
  • 1 to 2 Tablespoons milk
  • salt, to taste
