Zucchini Pancakes

Ingredients
  • 1 zucchini, shredded
  • 2 eggs
  • 1 Tbsp coconut flour
  • 1 Tbsp coconut oil
  • ¼ tsp turmeric
  • ½ tsp curry powder
  • ½ tsp fresh ginger, grated
Steps
  1. Shred zucchini. Squeeze to remove excess moisture.
  2. Combine with other ingredients except coconut oil. Let sit on counter while pan is heating.
  3. Preheat frying pan to medium heat. Add coconut oil and swirl about to coat bottom of pan.
  4. Drop 2 to 3 large spoonfuls in pan and flatten into disk shapes.
  5. Cook for approximately 5 minutes per side until edges are browned.
