Spinach Mushroom and Feta Crustless Quiche
Ingredients
  • 2 tablespoons vegetable oil
  • ½ cup thinly sliced white or yellow onion
  • 8 ounces cremini mushrooms, rinsed and thinly sliced
  • 1 teaspoon minced garlic
  • ½ teaspoon all-purpose seasoning salt, like Lawry’s
  • fresh ground black pepper, to taste
  • 5 ounces fresh baby spinach, (see recipe note if you want to use frozen spinach)
  • ¾ cup crumbled feta cheese
  • 7 large eggs
  • 1 cup whole milk, can use half-and-half or heavy cream or a combination
  • 1 tablespoon all-purpose flour
  • ¼ cup grated Parmesan
  • ½ teaspoon salt
  • freshly ground black pepper, to taste
  • ½ cup shredded Swiss cheese
