Ingredients
  • 2 lbs. Kosher salt, plus more for seasoning the fish
  • 2 lb. whole red snapper, cleaned, leaving head and tail intact
  • freshly ground black pepper
  • 5 Tbs. finely chopped fresh oregano, sage, or thyme, or a combination
  • half a lemon, sliced crosswise
  • extra virgin olive oil, for drizzling
  • Spanish sherry vinegar, optional
