Vegan Broccoli Quinoa Casserole
Ingredients
  • 3 cups chopped kale, packed
  • 3 cups cooked quinoa
  • 2 cups broccoli, chopped
  • ½ cup onion, chopped

  • 1 can whole coconut milk (15 oz)
  • 1-15 oz. can cannellini beans, drained

  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • ½ teaspoon thyme
  • ½ teaspoon rosemary
  • pinch of cayenne (optional)
