Ingredients

  • 15-ounce can black beans, rinsed and drained (or 1 ½ cups cooked or Instant Pot black beans)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 5 green onions
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground cumin
  • 2 teaspoon Epicure Kickin Jalapeno
  • 1 large garlic clove
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • For serving, large tortillas and chopped cabbage
