  • 1 tsp. salt
  • 2 Tbsp. sugar, plus more for sprinkling
  • 16 Tbsp. (2 sticks/250g) cold unsalted butter, cut into ½ inch (12mm) dice
  • 6 to 8 Tbsp. ice water
  • ½ to 1 cup pie filling
  • 1 egg, lightly beaten with 1 Tbsp. water (for egg wash)
