Sticky Chicken Skewers with Pickled Plums

  • 4 spring onions, thinly sliced
  • 2 tbs finely grated ginger
  • 2 garlic cloves, crushed
  • 200g snow peas, cut into matchsticks
  • 4 cups cooked jasmine rice
  • 2 tbs soy sauce
  • 1 tsp rice wine vinegar
  • 1 tbs sesame seeds, toasted
  • Spring onion curls, to serve
  • Toasted sesame seeds, extra, to serve

  • ⅔ cup (160ml) rice wine vinegar
  • 2 ½ tbs soy sauce
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 4 plums, halved, stoned

  • ¼ cup (60ml) plum sauce
  • ¼ cup (60ml) hoisin sauce
  • ¼ cup (60ml) soy sauce
  • 1 tbs sesame oil
  • 1 tbs finely grated ginger
  • 2 garlic cloves, crushed
  • 8 Coles RSPCA Approved Chicken Thigh Fillets, cut into 2cm pieces
