Georgian Cheese-Stuffed Bread [Vegan]
Ingredients

  • 1 cup almond milk, scalded
  • 2 tablespoons unsweetened coconut yogurt
  • 1 ½ teaspoons agave nectar
  • ½ teaspoon ground coriander
  • 1 ½ teaspoon salt
  • 2 teaspoons regular yeast
  • 2 cups all-purpose flour
  • 1 cup whole wheat pastry flour
  • Tofu farmer cheese (recipe below)
  • Fresh cilantro, for garnish, if desired

  • 1 16-ounce package extra firm tofu, pressed
  • ¼ cup cashews, soaked in water for a few hours, drained and rinsed
  • ½ cup almond milk
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon soy sauce
  • ¼ cup white miso paste
  • 1 garlic clove, minced or grated
  • ½ teaspoon dried onion flakes
  • ½ cup fresh cilantro, chopped
  • Ground black pepper, to taste
