Sourdough Walnut Banana Bread
Ingredients
  • 1 ¼ cups - 180g whole wheat pastry flour (white all-purpose flour will work, too)
  • ⅓ cup - 66g granulated natural cane sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 2 large eggs
  • ½ cup - 126g sourdough starter, discard or active, unfed
  • 2 small, very ripe banana mashed - 170g
  • ¼ cup grapeseed oil canola or vegetable oil will work fine, too
  • 1 teaspoon pure vanilla extract
  • 1 cup - 104g toasted walnuts, coarsely chopped
  • Coarse natural cane sugar, to finish (optional)
