3 cups vegetable stock

½ tsp kosher salt

1 tsp ground mustard

¼ tsp freshly ground nutmeg

1 cup heavy cream

2 tbsp cornstarch

2 cups shredded sharp cheddar cheese, or any other cheese or combination of cheese of your choice
