Jam Thumbprint Cookies
Ingredients
  • ⅔ Cup softened butter
  • ½ Sugar
  • 2 egg yolks
  • 1 tsp vanilla
  • 1 ½ cup flour
  • 2 slightly beaten egg whites
  • 1 Cup finely chopped walnuts or pecans
  • Any flavored jam (strawberry or Raspberry)
Steps
  1. Beat butter with electric mixer for 30 seconds.
  2. Add sugar mix until creamy
  3. Beat in egg yolks and vanilla
  4. Beat in as much flour as you can
  5. Stir in remaining flour
  6. Cover and chill for an hour
  7. Shape dough in one inch balls.
  8. Roll balls in egg whites and nuts.
  9. Place 1 inch apart on cookie sheet.
  10. Press your thumb onto center of each cookie.
  11. Alternative, shape dough into tube about 1 inch thick.
  12. Coat in egg wash, roll in nuts.
  13. Cut cookie dough about ⅛ inch
  14. Place cookies about 1 inch apart
  15. Press cookie with thumb
  16. Bake at 375° for 10 to 20 mins of edges are slightly browned.
  17. Transfer to wire rack to cool.
  18. Just before serving, top with jam.
