Chicken Divan

Servings: 1 casserole dish
Ingredients
  • 2 to 3 chicken breast raw
  • 1 large can and 1 small can of cream of chicken  (can use cream of mushroom or a mixture)
  • 1 to 2 heaping tablespoons of mayo
  • 2 tbs of lemon juice
  • Season to taste with salt, pepper, garlic and onion powder
  • 2 heads broccoli
  • pack ritz crackers (or other kind of crackers, like saltines)
  • 1 cup shredded cheese (for topping)
  • rice (for serving)
Steps
  1. Boil 2 to 3 chicken breast and chop/pull apart
  2. Chop two heads of broccoli and steam
  3. In large bowl, mix
  4. 1 large can and 1 small can of cream of chicken  (can use cream of mushroom or a mixture)
  5. 1 to 2 heaping tablespoons of mayo
  6. 2 tbs of lemon juice
  7. Season to taste with salt, pepper, garlic and onion powder
  8. Add chicken to mix
  9. Pour broccoli in bottom of casserole dish
  10. Spread mixture evenly on top
  11. Pour a pack of ritz crackers in a gallon ziplock bag and close. Run a roller over bag until crackers are in small crumbles.
  12. Pour evenly across top of casserole.
  13. Lightly top with shredded sharp cheddar cheese.
  14. Cover with aluminum and bake on 350 for at least twenty min. Remove foil, and cook another ten min or until cheese is melted.
  15. Serve over rice.
