Ingredients
  • Sunday Night Dinner & a “Movie”.  Felt like a Pizza Night last night, followed by snuggling on our chair & a half to watch PBS/Masterpiece Theater’s “Press”!   Thanks to BFF, Tess for recommending this Brit Series.  Who else is watching this?  For some reason, last night’s pizza was OUTSTANDING! Better than usual.

  • 1.  Trader Joe’s Garlic & Herb Pizza dough (usually I use their whole wheat, but there weren’t any yesterday).  Place in a big bowl, cover & left out at room temperature for about 4 hours.
  • 2.  Trader Joe’s No Fat Pizza Sauce
  • 3.  Trader Joe’s jarred roasted red peppers, sliced.
  • 4.  8 oz of Trader Joe’s Cremini Mushrooms sliced & sautéed
  • 5.  Trader Joe’s canned artichoke hearts, drained, rinsed, & sliced
  • 6.  1-½ links of No Evil Italian Sausage Plant Meat-The Stallion (contains 1g fat, 2g fiber, 25g protein per link). Sliced thinly, & browned with a little EVOO. Made in Asheville, NC.  Check out their website. www.noevilfoods.com/
  • 7.  A few sliced pitted Trader Joe’s kalamata olives
  • 8.   About ½ cup of Chloe Coscarelli’s left-over Mozzarella Sauce, drizzled over the top.  I’ll NEVER use anything else to top pizzas.  Most plant-based mozz is made with coconut oil-which is highly saturated  FAT.  This tastes great, is easy to make, & you can conveniently freeze leftovers.
  • 9. Top with big handfuls of Trader Joe’s Organic Arugula AFTER the pizza is done.  Turn off oven, & put back into the oven for about 5 minutes.

  • Bake in a pre-heated 425 degree oven, with pizza on a pre-oiled rimmed baking pan (or use parchment paper).   Mine took about 17 minutes for the crust to brown & be perfectly crisped.

  • Chloe Coscarelli’s Mozzarella Sauce
  •  
  • Use about ⅓ to ½ cup of the sauce on top of your pizza-drizzling or spooning it on top.

  • Ingredients

  • 1½ cups raw cashews (If you don’t have a high-powered blender soak overnight or boil for 10 minutes and drain)
  • 1 cup water
  • 2 tablespoons lemon juice
  • 1½ teaspoons sea salt
  • 1 garlic clove
  • 1 teaspoon onion powder
  • 2 tablespoons cornstarch
  • Directions
  •  
  • In a blender, combine cashews and water.
  • Blend on high until very smooth, about 2 minutes.
  • Add lemon juice, salt, garlic, onion powder, and cornstarch, and blend until smooth.
