Savoury Quinoa Breakfast Muffin
Ingredients
  • 100g rolled oats (or oat flour or gluten-free flour if required)
  • 100g quinoa flakes
  • 11⁄2 tbs flaxseed
  • 1 tbs ground cumin
  • 1 tsp paprika
  • 2 tsp baking powder
  • 1 tsp salt
  • 1⁄4 tsp pepper
  • 3⁄4 cup Greek yoghurt
  • 2 large eggs, whisked
  • 150g tasty (cheddar) cheese, grated
  • 150g zucchini, grated
  • 1 medium carrot, grated
  • 3 tbs pumpkin seeds
