The Ultimate Healthy Banana Muffins
  • 3 VERY overripe bananas, mashed (about 1 ⅓ cup mashed banana, make sure they are almost all the way brown)
  • ⅓ cup honey
  • 1 large egg, at room temperature
  • ½ tablespoon vanilla extract
  • ¼ cup olive oil
  • ¼ cup unsweetened vanilla almond milk (or milk of choice)

  • 1 ¾ cup whole wheat pastry flour*
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • Mix-ins
  • ½ cup chopped walnuts, plus ¼ cup chopped walnuts for sprinkling on top of muffins
