Homemade Beef/pork garlic and Rosemary sausages
Ingredients
  • Pork (900g)
  • Beef (1.4 kg)
  • 2tbls of Rosemary powder (ground in machine)
  • 1 cup of fresh parsley chopped in machine
  • 3 tbls of fresh minced garlic
  • Pepper
  • 1.2% of salt based on weight of meat
  • 2 tsp Cayenne pepper
  • 2 tsp chilli flakes
Steps
  1. Put into large glass bowl, minced meat in batches and the when everything was in glass bowl I Kneeded for about 5 minutes.
  2. Immediately put through sausage filler machine.
  3. If you don't have machine you can use piping bag and pipe lengths of naked sausage.
  4. Roll naked sausage in flour or flour and breadcrumb mix to help keep moisture in when cooking:-)
