Ingredients
- 4 Cutdacarb flatbreads
- 1 lb corned beef, chipped
- ½ cup sugar free thousand island dressing
- 12 slices of baby Swiss cheese
- 1 cup sauerkraut
- avocado oil
Steps
- 1. Working with just 1 flatbread at a time, lay it horizontally on your work surface.
- 2. On the long side closest to you, add on 2 slices of Swiss cheese side by side.
- 3. Place ¼ of the corned beef on top of the cheese and then top it with ¼ cup of sauerkraut.
- 4. Spoon 2 Tbsp of the thousand island dressing all across the meat, cheese and sauerkraut.
- 5. Cut a piece of Swiss cheese in half and place those pieces over top of the dressing. (The cheese helps to act as our “glue.”)
- 6. Roll it up tightly and then cut it in half.
- 7. Repeat three more times.
- 8. Heat a skillet over medium heat and add in a couple tablespoons of avocado oil.
- 9. Brown the Reubens on all sides until golden brown. *They cook really fast so don’t leave them unattended
