Sweet Potato Blueberry Protein Muffins
Ingredients
  • 1 cup old fashioned rolled oats (gluten free if needed)
  • 1 small sweet potato (cooked, peeled, & roughly chopped/~200 grams)*
  • 1 cup yogurt (I used siggi's 4%)
  • 2 large eggs
  • 2 scoops natural flavored protein powder (~47 grams)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1½ cup blueberries
