Guilt-Free Garlic Parmesan Zucchini Noodles Pasta
Ingredients
  • 6 to 8medium zucchini (about 2 pounds)
  • 1 block tofu
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoon minced garlic (3 to 4 cloves)
  • 4 medium tomatoes, chopped, see note (about 12 ounces)
  • 1 cup shredded parmesan cheese, plus more for serving, see notes for alternatives
  • 1 cup basil leaves, torn into pieces
  • 2 teaspoon cornstarch
  • 4 teaspoons cold water (add broth if need more juice)
  • Salt, to taste
