Slow Cooker White Bean & Chicken Chili
Ingredients
  • 2 pounds boneless, skinless chicken breasts, cut into bite size pieces (about ½-inch)
  • 1 small sweet onion, diced
  • 2 cloves garlic, minced
  • 2 jalapeño peppers, seeded and diced
  • 1 medium poblano pepper, seeded and diced
  • 2 (4 ounce) cans diced green chiles
  • 1 teaspoon kosher or sea salt, more or less to taste
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ¼ cup freshly chopped cilantro
  • 3 (15-ounce) cans cannellini beans (optional navy beans), drained
  • 4 cups chicken broth, fat-free, low-sodium
  • ½ cup reduced-fat grated cheddar cheese
  • 1 cup reduced-fat sour cream or Greek yogurt
