DESSERT/VEGAN-Vegan Key Lime Cheesecake (Key Lime Pie)
Ingredients
  • subheading: For the crumb crust:
  • 1 ¾ cup oats (use gluten-free if necessary)
  • ½ cup coconut sugar or Sucanat or brown sugar
  • ¼ teaspoon salt
  • 7 tablespoons refined coconut oil or vegan butter
  • subheading: For the key lime filling:
  • 3 cups dairy-free cream cheese (Tofutti brand works best - this equals 3 containers)
  • 1 cup refined coconut oil (melted)
  • ¾ cup vegan sugar
  • ½ cup lime juice
  • subheading: For the silky whipped cream topping:
  • ½ cup Country Crock Plant Butter (1 stick) softened (It only works with this brand - I always use the olive oil version)
  • 1 ¾ cups vegan powdered sugar
  • 2 teaspoons vanilla extract
  • ½ cup aquafaba (the liquid from a can of white beans or chickpeas)
