Porcupine meatballs
Ingredients
  • 750g beef mince
  • ½ cup uncooked rice
  • 1 finely chopped onion
  • 1 tsp of salt
  • 1 tsp of pepper
  • 2 tsp dried mixed herbs
  • 2 x 500g rosella can condensed tomato soup
  • 1 ¼ cups of water
Steps
  1. Mix mince, rice, onion, herbs and seasoning together in a bowl
  2. Shape into bite sized balls
  3. Heat tomato soup and water until boiling, then drop in meatballs
  4. Simmer for 45 minutes
  5. Serve with potato mash and veggies
