Lentil Soup (Harira) Recipe. All Variations
Ingredients
  • 2 large onions, quartered
  • 1 large bunch flat-leaf parsley
  • 1 bunch cilantro, tough end stems cut off
  • 6 ribs celery, peeled
  • 4 cups canned crushed tomatoes
  • 1∕3 cup olive oil
  • Salt to taste
  • 3 quarts (12 cups) water
  • 2 teaspoon turmeric
  • 2 cups green or brown lentils
  •  
  • ¼ cup flour (any flour, including gluten-free), whisked with about 1 cup water until smooth
  • 2 tablespoons ground cumin
  • ¼ cup fresh lemon juice
  • Ground pepper to taste
