Ingredients

  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cans (15.25 oz.) Black Beans, drained and rinsed
  • 1 can (11 oz.) Fiesta Style Corn, drained
  • 1 can (10 oz.) red enchilada sauce
  • Salt, to taste
  • Ground pepper, to taste
  • 1 cup shredded Mexican style cheese
  • 12 small flour or corn tortillas, warm
  • Sour cream, if desired
