Ingredients
- 3 ½ c. Flour
- 1 pkg active dry yeast
- 1 ¼ c. Milk
- ¼ c. granulated Sugar
- ¼ c. Shortening
- 1 tsp. salt
- 1 egg
- ¼ c. Butter - melted
- ½ c. brown sugar
- ½ c. sugar
- ½ tsp ground cinnamon
- ¼ c. butter, melted
- subheading: Topping later:
- 1 c. Sugar
- 1 tsp. Cinnamon
- Pecans*
Steps
- In large mixer bowl combine 2 c. of flour and the yeast.
- In saucepan, heat milk, ¼ c. granulated sugar, shortening, and salt just till warm (115° - 120°); stirring constantly to melt shortening.
- Add to dry ingredients in mixer bowl; add egg. Beat at low speed with a mixer for half a minute, scraping sides of bowl constantly. Beat 3 minutes at high speed.
- By hand, stir in enough of the remining flour to make a moderately soft dough. Shape into a ball. Place dough in a lightly greased bowl, turning once to grease surface.
- Cover and let rise in a warm place until double (1½ to 2 hours).
- Punch down; turn out on lightly floured surface. Divide dough in half. Cover; let rest 10 minutes.
- Roll out one portion of dough at a time to a 12" square.
- Combine ¼ c. melted butter; brown sugar, ½ c. granulated sugar and ½ tsp. cinnamon. Spread half of mixture over dough. Roll up lengthwise jelly-roll fashion; pinch to seal edges.
- Cut into 12 rolls. Place on a greased baking sheet at least 3" apart. Flatten each to about 3" in diameter. Repeat with remaining dough and sugar mixture. Let rise in warm place (about 30 minutes).
- Cover with waxed paper. Roll over tops with rolling pin to flatten to ⅛ - inch thickness**. Carefully remove paper. Brush tops of rolls with remaining melted butter. Combine remaining 1 c. sugar, pecans, and 1 tsp. cinnamon. Sprinkle over rolls. Cover with waxed paper; roll flat again**. Remove paper.
- Bake at 400° for 10 to 12 minutes. Remove immediately from baking sheets.
Notes
- *I don't use pecans
- **I don't roll out too thin. I like them a bit softer and thicker dough. If you like crispy, roll them out thinner
